A recipe that i know works is the one for tortillas ( i will be eating mexican this Christmas. 2 cups of whole wheat flour, 2tblsp corn flour, mix,like pie dough, with 1/4 cup tenderflake. add 3/4 cup of boiling water. make a nice dough, let sit for over an hour, roll out and fry some 30 seconds both sides. Worked out perfect for me. Hasta la vista!
I recently came across a recipe for creamed corn that I can eat as a meal on it's own - or even dessert! I absolutely love it.
I don't do a lot of measuring, so this might be in "round" numbers.
diced onion - about 1/2 a large one 1/8 cup butter about 1/3 of 2kg frozen corn 1 cup whipping cream pepper/salt (to taste) couple tablespoons sugar (I use splenda) 1 cup milk couple tablespoons flour 1/3 cup parmesan cheese
fry onions until translucent add frozen corn. Cook until corn is warm. (I sometimes cook it until it is starting to camelize) Add, cream, sugar, salt, pepper. whisk flour into milk and pour into corn. Cook until thickens. Add parmesan after it has simmered a bit.
One note: it does thicken up quite a bit - especially with the cheese. If you want to keep it a bit runnier, then it would not be so thick the next day for left overs!
